Pepper mackerell and beetroot salad

Today we came across a beetroot that we really ought to do something about, and the menu turned out surprisingly well: salad made from grated, raw beetroot, sliced cabbage and chopped tomato, served with smoked pepper mackerel and warm boiled rice.
